Behind the Scenes
Fruit from the Yabby Lake Estate Vineyards
Clones: MV6, Pommard (structure and complexity) and 115 (imparts layers of elegance)
Handpicked, carefully destemmed in to open fermenters
Three days cold soaking to ensure even and thorough extraction
The wine fermented and was on skins for a period of 14 days, after which it was transferred into French oak barrel (20% new), aged for 9 months where it completed malolactic fermentation
Prepared for bottling in December 2008
The Result
Deep crimson in color. The aromas are dominated by cherry, strawberry and dark berry fruits complemented by a touch of spice and underlying French oak. The palate has a lovely soft and velvety texture, with powerful flavours of dark fruits and a finely structured finish.
